Butternut Squash Pancakes

INGREDIENTS

1 cup Cooked, cubed butternut squash To make this a

super quick meal, purchase the squash already cubed

1/2 cup Almond butter no sugar added

4 eggs

INSTRUCTIONS

Blend all ingredients in a blender.

Pour the batter onto a greased griddle.

Once the pancakes begin to bubble, flip them to the other side.

Serve the pancakes with sugar-free syrup and butter. I like to use

Lakanto Sugar-Free Syrup, which is sweetened with monk fruit.
