The sweet taste of the butternut squash mixed with the savory flavor of the walnuts, feta, and bacon creates an explosion of flavor in every bite! I'll never go back to potato hash browns again!!!

Ingredients
- 1 teaspoon olive oil for sautéing onions and garlic
- 1/4 Small sweet onion chopped
- 1/2 teaspoon garlic minced
- 2 tablespoons Butter divided for toasting walnuts and sautéing squash
- 1/4 cup Walnuts
- 1 cup Butternut squash spirals frozen or fresh
- 3 pieces bacon cooked
- 1 ounce Feta crumbled
- 1/2 teaspoon Himalayan Pink Salt

Instructions
- Cook the butternut squash spirals according to package instructions (the frozen spirals I buy take 6 minutes in the microwave).
- While the squash is cooking, sauté the onions and garlic in olive oil until slightly browned.
- Add 1 tablespoon of butter to the pan with onions and garlic. Once it melts, add the cooked butternut squash spirals.
- Place the walnuts on a microwave safe plate and microwave them for 45 seconds. Remove the walnuts from the microwave and add 1 tablespoon of butter. Microwave them a second time for 30 seconds.
- Crumble the three pieces of bacon and add to the squash in the pan.
- Add toasted (microwaved) walnuts to the butternut squash.
- Add the crumbled feta cheese to the butternut squash.
- Stir all of the ingredients together gently while they're still cooking in the pan. Remove from the pan and sprinkle with salt.
- If desired, serve with a side of eggs and bacon.
